This exceptional tea cake is crafted from White Peony (Bai Mudan) leaves harvested in early spring of 2022 in Fuding, Fujian, following a rare late snowfall. The unique climatic conditions—where winter's last snow met spring's first growth—have endowed this tea with extraordinary character: it combines the refreshing tenderness of spring tea with the rare sweetness and complexity intensified by the cold.
Compressed into a 300g cake for optimal aging, this tea presents a beautiful balance of silvery buds and young leaves. When brewed, it produces a clear, bright apricot-colored liquor with a captivating aroma that blends fresh floral notes, honey sweetness, and a distinct, refreshing coolness—a lingering reminder of its snowy harvest. The taste is mellow and smooth, with a clean, sweet aftertaste and a subtle mineral depth.
Brewing Guide:
Teaware: Porcelain gaiwan or Yixing teapot
Water Temperature: 95-100°C (203-212°F)
Amount: 5-6g per 150ml
Rinse: Gently rinse with hot water to awaken the compressed leaves
Steeping:
First infusion: 15-20 seconds
Gradually increase by 10 seconds for subsequent brews
Can be brewed 7-9 times; also excellent for gentle simmering
